FIX AHEAD MASHED POTATOES | |
3 lbs. potatoes (about 4 lg.) 1/2 tsp. salt 2 tbsp. butter 2 (3 oz.) pkgs. cream cheese, softened 2/3 c. sour cream 1/4 tsp. salt 1 tbsp. butter, melted 1/2 tsp. paprika Place potatoes in saucepan. Add water to cover and 1/2 teaspoon salt. Bring to a boil, cover, reduce heat to medium and simmer until potatoes are tender. Drain and peel potatoes. Place potatoes in a large mixing bowl and mash with potato masher. Add 2 tablespoons butter and next 4 ingredients, mixing until all ingredients are blended. Spoon mixture into a lightly greased 12 x 8 x 2 inch baking dish. Brush top of mixture with melted butter. Sprinkle with paprika. Bake immediately or cover and refrigerate. If refrigerated, let stand at room temperature 30 minutes before baking. Bake uncovered for 30 minutes at 350 degrees. |
