GOLDEN HAM CASSEROLE 
2 c. cubed ham
1/4 c. butter
2 tbsp. onions, chopped
2 c. cubed potatoes, partially cooked
1 c. diced celery, partially cooked
1 c. sliced carrots, partially cooked
2 tbsp. chopped green pepper
3 tbsp. butter
1 1/2 c. milk
Dash of pepper
1/2 c. grated American cheese
1/2 c. buttered bread crumbs, browned
2 tbsp. flour
1 tsp. salt, or less

Brown ham and onions in butter. Arrange layers of ham and vegetables in a buttered 1 1/2 quart casserole. Melt 3 tablespoons butter in small skillet, stir in flour, add milk, seasonings and cheese, cook over low heat until slightly thickened. Pour over ham and vegetables. Sprinkle with buttered crumbs. Bake at 375 degrees for 25-30 minutes. Serves 6.
