CHICKEN WITH ORANGE SAUCE 
2-3 chicken breasts, split & skinned (boned, optional)
Salt & pepper
2 tbsp. butter
1 c. orange juice
1 c. chicken broth
2 tbsp. cornstarch
1 orange, sliced thinly

Salt and pepper chicken breasts. Brown in butter. Add orange juice and chicken broth. Arrange orange slices on top of breasts. Heat to boiling. Add cornstarch. (May need to remove chicken temporarily to mix cornstarch in well.) Cook an additional 8 minutes over medium heat, stirring occasionally. Serve with or over rice or noodles.
