LEMON CHICKEN 
1 lb. chicken breast

MARINADE:

1/2 tsp. salt
1/2 tbsp. wine
1/2 tbsp. soy sauce
1 tbsp. cornstarch
1 tbsp. cold water
1 egg yolks
1/8 tsp. pepper
8 c. oil

CHICKEN COATING:

6 tbsp. cornstarch
3 tbsp. flour

SEASONING SAUCE:

3 tbsp. sugar
3 tbsp. fresh lemon juice
3 tbsp. soup stock
1/2 tsp. salt
2 tbsp. cornstarch
1 tsp. sesame oil
3 drops yellow food coloring

Remove chicken skin, cut into 1 1/2 x 2 inch cubes. Marinate for 10 minutes.

Mix Seasoning Sauce in bowl.

Mix 6 tablespoons cornstarch and 3 tablespoons flour on plate. Coat chicken. Deep fry for 1/2 minute over low heat. Reheat oil very hot. Deep fry for 10 seconds. Drain and remove.

Heat 1 tablespoon of oil. Stir fry seasoning sauce to boil then splash 1 tablespoon of oil onto sauce.

Pour sauce over fried chicken slices.
