TRADITIONAL "BIG SOUP"
(MINESTRONE!)
 
1 med. onion, chopped
3 tbsp. olive oil
16 oz. can low-salt kidney beans
1/2 tsp. rosemary
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. cilantro
1/4 c. tomato paste
2 c. shredded cabbage
2 cloves crushed garlic
8 c. vegetable stock
6 c. cut up fresh veggies (potatoes, celery, beans, squash, tomatoes, etc.)
1/2 c. whole wheat macaroni
Mrs. Dash, pepper, Parmesan

In a large saucepan over medium heat. Cook onions and garlic in oil until clear. Add stock, can of beans, veggies and spices. Simmer, covered, for 30 minutes.

Stir in tomato paste and macaroni and simmer another 15 minutes. Add cabbage and cook, covered, 5 more minutes. Season to taste with salt substitute and pepper. Dust each serving with Parmesan cheese, if desired. Makes 8 servings.
