TRADITIONAL AMERICAN VEGETABLE
SOUP
 
1 tbsp. olive oil
1 tsp. minced garlic
2 c. diced onion
1/2 tsp. thyme
2 c. diced carrots
2 c. diced celery
2 c. corn (fresh or frozen)
2 c. diced potatoes
1 1/2 c. diced green beans
1 1/2 c. petite peas
1 1/2 c. diced cabbage
8 c. water
2 tbsp. powdered vegetable broth or 3 vegetable bouillon cubes
1 heaping tbsp. soy miso
1 tbsp. tomato paste
Fresh ground pepper to taste
Orzo & grated Parmesan cheese (opt.)

1. Heat oil with garlic, onion and thyme and saute until onion begins to soften, approximately 2 minutes.

2. Add carrots, celery, corn, potato, green beans, peas and cabbage. Saute for 2 minutes, stirring frequently.

3. Add water and bring to a boil. Stir in powdered vegetable broth, miso and tomato paste. Cover and bring to a boil. Simmer for 35 to 40 minutes being careful not to over cook. At this point you might add orzo according to package directions. Adjust seasoning. Garnish with grated Parmesan cheese.
