SUGAR CAKES: TRADITIONAL
PENNSYLVANIA DUTCH RECIPE
 
1 c. hot mashed potatoes
1 c. sugar
1 pkg. yeast dissolved in 1 c. warm water
1/2 c. melted butter
1/4 c. Crisco, melted
2 eggs, beaten
4 c. unsifted flour
Approx. 1 1/2 butter sticks
Approx. 1/2 c. brown sugar
Approx. 1 tbsp. cinnamon

Combine mashed potatoes and sugar. Add yeast mixture, butter, Crisco and eggs by turn stirring well after each addition. Sift in flour. Mix with a spoon until smooth. Let rise 4-5 hours at room temperature or overnight in refrigerator.

Spoon into buttered pan (three 8-9 inch square pans) so dough is 1/3 to 1/2 inch deep. Let rise 1-3 hours.
