RICE PUDDING | |
1 1/3 c. milk 5 tbsp. sugar 1 tbsp. butter 1 tsp. vanilla 4 eggs, beaten 2 c. cooked long grain (or pearl) rice 1/2 tsp. grated lemon rind 1 tbsp. fresh lemon juice 1/3 c. raisins 1/2 tsp. cinnamon Pinch of salt Preheat oven to 325 degrees. In a bowl, combine milk, salt, sugar, butter, vanilla, and beaten eggs. Beat until smooth, then mix the cooked rice. Add lemon rind, lemon juice, raisins and cinnamon and mix. Pour into greased 8x10 inch baking dish and bake until top is golden brown and center is set, about 50 minutes. |
