3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
3 eggs
1 1/2 c. oil
1 1/2 tsp. vanilla
2 c. sliced bananas
1 (8 oz.) can crushed pineapple, undrained
Confectioners' sugar (optional)

Sift together flour, soda, cinnamon, sugar and salt. Make a well in center of dry ingredients and add eggs, oil, vanilla, sliced bananas and crushed pineapple with its juice. Beat at low speed just until well combined. Do not overbeat.

Pour into greased 10 inch tube pan and bake at 350 degrees for 1 hour and 20 minutes or until cake tests done. Cool on rack. Turn onto serving plate. Dust with confectioners' sugar.
