TOFU CORN BREAD 
1 1/2 c. cornmeal
1/4 c. whole wheat flour
1 tsp. salt (optional)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 lb. tofu
2 eggs
3 tbsp. oil
1/4 c. honey
1 c. low-fat milk

Set oven to 425 degrees. Stir dry ingredients. In blender, put tofu, eggs, oil, honey, milk just until smooth. Add to dry ingredients, stir just until blended. Pour into greased, floured 9x9 pan, and bake at 425 degrees for 25-30 minutes.
