MONICOTTI WITH CHEESE FILLING 
1 lb. Ricotta cheese
3 tbsp. Parmesan cheese
1 egg, slightly beaten
1/4 tsp. salt
8 oz. grated Mozzarella cheese
2 tsp. sugar
1 tbsp. parsley flakes
1/4 tsp. pepper
Spaghetti sauce (1 qt. homemade or 2 (15 1/2 oz.) jars)
1 pkg. (14) monicotti noodles, uncooked

Combine first 8 ingredients, reserving some Mozzarella. Fill uncooked monicotti. Pour layer of sauce in baking dish. Place filled monicotti over sauce and pour remaining sauce over monicotti. Sprinkle with reserved Mozzarella and Parmesan cheese. Cover tightly with foil. Bake at 400 degrees for 45 minutes. May be uncovered last few minutes. Let stand before serving. Serves 6.
