ITALIAN CHEESE PIE 
CRUST:

9 x 13 glass dish
1/4 lb. butter
6 tbsp. sugar
2 tsp. baking powder

Cream butter and add sugar and eggs. Mix well until sticky. Spread into dish with hands.

FILLING:

3 lbs. Ricotta
1 1/2 c. sugar
6 eggs
Lemon and/or orange rind grated (1 tbsp.)
1 tbsp. vanilla
1 tbsp. cinnamon

Beat all ingredients together. Pour into baking dish. Bake at 325 degrees for 1 hour.
