ITALIAN SPINACH AND CHEESE PIE 
1 pkg. chopped spinach
1/2 c. grated Parmesan or Romano cheese
2 lb. Ricotta
3 eggs
Salt and pepper
8" pie crust

Drain uncooked chopped spinach. Combine all ingredients and mix well. Pat in pie crust and bake 30 minutes or UNTIL SET IN CENTER.
