ITALIAN CHEESE PIE 
1/2 c. farina
1 qt. milk
1 c. sugar
1/2 stick butter
1 lb. Ricotta cheese
3 eggs
1 tsp. lemon juice
Few drops vanilla

Mix together the farina, milk and sugar and boil until thick. Add the butter until melted and let cool.

Then add the ricotta cheese and the eggs, beating after each egg is added. Add the lemon juice and a few drops of vanilla. Grease a 9"x13" glass baking dish with butter. Bake at 350 degrees for 1 hour.

This recipe need at least 1 cup of farina. After 1/2 hour of stirring with 1/2 cup, it never thickened. I added another 1/2 and thickened. Since I'm not a lover of vanilla, I put in lemon zest and 1 tbsp. lemon extract. It was delicious.
