RICOTTA CHEESE PIE 
1/2 c. butter or shortening
1/2 c. sugar
2 whole eggs
2 1/2 c. flour
1 tsp. baking powder
1/2 c. milk combined with 1 tsp. vanilla

Blend first 3 ingredients; add rest of ingredients. Roll out to fill greased pie pan or cake pan whichever you prefer.

FILLING:

2 lb. ricotta
1 c. confectioners sugar
3 egg yolks, plus 1 whole egg, beaten
1 tsp. vanilla

Blend these 4 ingredients together and pour into shell. Roll out remaining dough and make strips on top. Bake at 350 degrees for 35-40 minutes or until brown.
