MIXED VEGETABLE AND CAULIFLOWER
SALAD
 
1 bunch fresh spinach (or mixed greens to make 4 cups)
1 med. zucchini
1 med. tomato
1 sm. red onion
1/2 c. raw cauliflowerets
1 avocado
1 c. creamed cottage cheese, optional
1/2 c. oil vinegar dressing
1/2 c. sunflower seeds

Line bottom and sides of salad bowl with large spinach leaves. Tear remaining spinach into bite size pieces (makes about 4 cups). Slice zucchini, layer over the spinach. Slice tomato into 8 slices. Slice and ring onion. Add tomato, onion and cauliflowerets to salad. Cut, peel and slice avocado into 8 slices. Add avocado to bowl, then add cottage cheese, if desired. Pour dressing over salad and sprinkle with sunflower seeds.
