LAYERED MIXED VEGETABLE SALAD | |
1 head lettuce, torn into bite size pieces 1/2 c. chopped green or red onion 1 stalk celery, chopped 1 sm. green pepper, chopped 10 oz. pkg. frozen peas, thawed and drained 1 c. mayonnaise 2 tbsp. sugar 2 c. shredded cheddar cheese (8 oz.) 10 slices bacon, fried, drained and crumbled 8 oz. can water chestnuts, drained and sliced In large bowl or 13 x 9 inch pan, layer lettuce and onion. Spoon 1/2 cup mayonnaise evenly over top. Layer celery, green pepper, and peas; spread remaining mayonnaise over top. Sprinkle sugar, cheese, and bacon over top. Cover and refrigerate at least 8 hours. Add water chestnuts. Toss before serving. Serves 10-12. |
