SALMON FRITTERS 
1 1/4 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1/4 c. cornmeal
1 egg
3/4 c. milk
1 (15 1/2 oz.) can salmon (2 c.)

Sift together flour, baking powder, salt and cornmeal. Combine egg and milk; stir into dry ingredients. Drain salmon, break into pieces and fold into mixture. Drop by tablespoons into hot fat. Cook until golden brown.
