RUTH'S PUMPKIN TORTE 
24 graham crackers, crushed
1/3 c. sugar
1/2 c. butter
2 eggs
3/4 c. sugar
8 oz. cream cheese
2 c. pumpkin
3 egg yolks
1/2 c. sugar
1/2 c. milk
1/2 tsp. salt
1 tbsp. cinnamon

Mix and press into 9 x 13 inch pan, graham crackers, 1/3 cup sugar and 1/2 cup butter. Mix and pour over crust, 2 eggs, 3/4 cup sugar, and 8 ounces cream cheese. Bake 20 minutes at 350 degrees. Mix together and cook until mixture thickens - pumpkin, egg yolks, 1/2 cup sugar, 1/2 cup milk, salt and cinnamon.

Remove from heat and add 1 envelope plain gelatin dissolved in 1/4 cup cold water. Cool. Beat 3 egg whites and 1/4 cup sugar. Fold into pumpkin mixture. Pour over cooled baked crust. Top with whipped cream.
