PUMPKIN DATE TORTE | |
1/2 c. chopped dates 1/2 c. chopped walnuts 2 tbsp. flour 1/2 c. butter 1 c. brown sugar 2/3 c. cooked pumpkin 1 tsp. vanilla 2 eggs 1/2 c. sifted flour 1/2 tsp. baking powder 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. ginger 1/4 tsp. baking soda Mix dates, nuts and 2 tablespoons flour; set aside. Melt butter; blend in brown sugar. Remove from heat; stir in pumpkin and vanilla. Beat in eggs, one at a time. Sift together dry ingredients; add to pumpkin mixture, mixing thoroughly. Stir in dates, nuts and flour. Turn into greased 9 x 1 1/2 inch round baking dish or pan. Bake at 350 degrees, 20-25 minutes. Cut in wedges and serve with whipped cream or Cool Whip. |
