SWEET POTATO CANDY 
1 fresh coconut, grated (2 2/3 c.) or 1 (7 oz.) bag or can
3 boxes 10X sugar
2 sticks butter
DO NOT ADD LIQUID!
Cinnamon

Grate coconut; add butter and sugar. Work with hands until mixture is creamy and well mixed. If too soft, refrigerate for 1 hour. Then shape and roll in cinnamon in small deep bowl. (Shape like tiny sweet potatoes, thus, the name.) Yield: about 13 1/2 dozen (SCRUMPTIOUS!... and, magically, this recipe has no calories!!!)
