COTTAGE PUDDING 
1 3/4 c. sifted all-purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
1 c. sugar
1/2 c. soft butter
2/3 c. milk
2 eggs
1 tsp. vanilla

Sift together flour, baking powder, salt and sugar. Add the soft butter and about half of the milk. Beat for 2 minutes at medium speed. Add the remaining milk, unbeaten eggs and vanilla. Beat another 2 minutes. Pour the batter into a greased 8" x 8" x 2" pan or a 7" x 11" x 1 1/2" pan. Bake at 350 degrees for 25 to 30 minutes. Cut in squares and serve with Chocolate Sauce.

CHOCOLATE SAUCE:

2 squares unsweetened chocolate
2 c. milk
2/3 c. sugar
2 1/2 tbsp. flour
1/8 tsp. salt
2 tbsp. butter
1 tsp. vanilla

Heat chocolate and milk in double boiler. Combine sugar, flour and salt. Add gradually to chocolate mixture. Cook until thickened, stirring constantly. Cook five minutes longer, stirring occasionally. Add butter and vanilla. Serve on Cottage Pudding or other dessert. Makes 2 1/2 cups.
