1 can chick peas or garbanzo beans, drained 3-4 cloves garlic, pressed Olive oil or Vegetable oil Salt and pepper to taste 1 tbsp. dried parsley OR 2 tbsp. chopped fresh parsley 2-3 tsp. lemon juice Syrian bread cut in wedges OR Crackers or veggies to dip Use food processor, or blender; but beware of burning out blender motor as this is quite stiff at first! Add chick peas, garlic and parsley. Begin processing, adding oil slowly until you have a toothpaste consistency. Now taste, and add just enough lemon juice to have a slightly tart taste. Continue processing, adding oil until you have a fairly smooth paste just right for dipping the bread into. Season with salt and pepper to taste. Put in pretty dish, cover, and refrigerate to blend flavors. Serve on platter surrounded by bread, veggies such as celery and carrots, or crackers. |
