FISH LOAF 
16 oz. uncooked haddock
Lemon juice
3 eggs, separated
5 Ax Max crackers, crumbled
1/2 c. onions
1/4 c. green peppers
1/4 c. celery
Garlic to taste

Place fish in baking dish, sprinkle with lemon juice and bake at 350 degrees for 15 to 20 minutes. Flake fish with fork. Mix with egg yolks, crackers, onions, peppers, celery, and seasoning in small bowl. Beat egg whites until stiff, fold into fish mixture. Pour into Pam-sprayed loaf tin. Bake at 325 degrees for 15 to 20 minutes. Yields: 1/5 cooked vegetable, 1/2 bread portion, 1 protein.
