COLONIAL INN GREEN BEANS
ALMONDINE
 
2 lbs. fresh green beans
1 sm. ham hock
1 c. water
1/3 c. minced onions
2/3 c. slivered almonds
3 tbsp. butter
1 tsp. salt

Cut beans into 1 1/2 inch pieces and wash thoroughly. Place in 5 quart Dutch oven; add ham hock and water. Bring to boil, then reduce heat. Cover and simmer 1 hour. Drain off excess liquid. Saute onions and almonds in butter until onion is tender. Add to beans along with salt. Toss lightly. Yield 8 servings.
