MERINGUE COOKIES 
2 egg whites
1/3 c. sugar
1/4 pinch salt (approx. 1/4 tsp.)
1/2 tsp. vanilla or peppermint
6 oz. chocolate chips (optional)

Beat egg whites to stiff peaks. Add sugar gradually, beating constantly. Add pinch of salt, vanilla or peppermint. Fold in chocolate chips. Drop by spoonful on ungreased cookie sheet. Pre-heat oven to 375 degrees. Put cookies in and turn off the heat. Leave in the closed oven overnight. Makes 2 dozen.
