FILLETS AU GRATIN | |
Serves 4. 4 (4 oz.) fish fillets (sole, halibut, roughy, flounder) 1/4 tsp. pepper 2 sm. zucchini, sliced 2 med. tomatoes, sliced 3 tbsp. sliced green onions 1/2 c. fresh bread crumbs 2 tbsp. melted butter 2 tbsp. lemon juice 1/2 c. freshly grated Parmesan cheese Place fillets in non-stick sprayed baking dish. Season with pepper. Cover with zucchini, tomatoes and onions. In a small bowl, combine bread crumbs, butter and lemon juice. Toss together and spread over vegetables. Top with cheese and bake at 425 degrees for 20 to 30 minutes. |
