FIESTA CORNBREAD 
1/4 c. vegetable shortening or oil
1 c. flour
1 c. yellow corn meal
4 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 1/2 c. shredded sharp cheddar cheese
1 (8 1/2 oz.) can cream style corn
1 (4 oz.) can chopped green chilies, drained
1/3 c. milk
2 eggs, beaten

Heat oven to 400 degrees. In 8 or 9 inch square baking pan or 10 inch ovenproof skillet, melt shortening in oven, tilt pan to coat bottom evenly. Combine dry ingredients. Add melted shortening and remaining ingredients; mix just until blended. Pour into prepared pan. Bake 30 to 35 minutes until golden brown and a wooden pick inserted in center comes out clean. 9 to 10 servings.
