SAUERKRAUT CASSEROLE 
1 lb. loose sausage
1/4 c. onion, chopped
1 c. celery, chopped
6 potatoes, sliced

WHITE SAUCE:

3 tbsp. butter
3 tbsp. flour
3 c. milk

Brown sausage. Drain grease. Add butter, flour and 3 cups milk. Bring to a boil. Remove from heat.

In casserole or baking dish, layer 1/2 potatoes, onion and celery. Pour 1/2 of sausage, white sauce over. Repeat with balance of potatoes, onion, celery and white sauce. Bake at 350 degrees for 1/2 hour, foil covered and 1/2 hour uncovered.
