GARDEN CASSEROLE 
1/2 c. olive oil
1 med. onion, sliced
1 lg. carrot, sliced in rounds
2 green peppers, sliced in strips
4 sm. zucchini, sliced in rounds
2 c. shredded cabbage
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. dried tarragon
4 oz. Muenster cheese
2 tomatoes, sliced
1 1/2 c. seasoned bread crumbs

Heat some olive oil in pan; stir-fry onion and carrot 3 minutes. Add cabbage and pepper; continue stirring 2 minutes. Add zucchini; cook 1 more minute. Add salt, pepper, tarragon, and cheese.

Place mixture in lightly buttered 7 1/2 x 11 ovenproof dish. Top with tomato slices. Combine remaining olive oil and bread crumbs. Sprinkle on top of tomatoes. Bake at 350 degrees for 20 minutes.
