SWEET POTATO ROUND CAKE 
1 c. butter, softened
2 c. sugar
2 1/2 c. sweet potatoes, cooked & mashed
4 eggs
3 c. flour
1/4 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. vanilla
1/2 c. pecans, chopped
1/2 c. coconut, grated

Cream butter and sugar until fluffy. Beat in sweet potatoes. Add eggs one at a time, mixing well. Combine 6 dry ingredients and stir into creamed mixture. Add vanilla and mix well. Stir in nuts and coconut. Bake in greased and floured tube pan at 350 degrees for 1 1/4 hours or until done.
