SPANISH CORN PUDDING | |
2 eggs, slightly beaten 1 tsp. salt 1/8 tsp. pepper or chopped hot pepper 1/3 c. sugar 2 c. cream-style corn 2 tsp. butter 1 1/2 c. milk 1 tbsp. chopped red pepper 1 tbsp. chopped green pepper Combine eggs, salt, pepper, sugar and corn. Scald milk and add butter. Stir into egg mixture; mix well. Add peppers and pour into 1 1/2 quart baking dish. Place in pan containing an inch of hot water. Bake at 350 degrees for 35 to 40 minutes or until silver knife inserted near center comes out clean. Yield: 6 servings. |
