SEVEN LAYER SALAD 
1 med. head lettuce, torn into bite size pieces
1 c. celery, diced
4 hard boiled eggs
10 oz. frozen peas, uncooked and separated
1/2 c. green pepper, diced
1 onion, diced
1 1/2 c. mayonnaise
2 tbsp. sugar
4 oz. grated Cheddar cheese
Bacon bits

In large bowl, layer lettuce, followed by celery - then eggs, peas, peppers and onion. Combine mayonnaise and sugar and spread over vegetables. Sprinkle with cheese. Cover and refrigerate 8 hours or overnight. Sprinkle bacon bits over cheese before serving. This salad can be tossed before serving or served in layers as prepared. Serves 18-20.
