SCALLOPS WITH FRUIT 
1 1/2 lbs. sm. bay scallops
Pepper, thyme, nutmeg
1 papaya
2 apples
2 kiwi fruit
3 to 4 broccoli stems
1/4 c. fish stock or clam juice (optional)
1/2 c. orange juice
1 tbsp. cornstarch
1/4 c. yellow cornmeal

Wash scallops and dry with paper towel. Season lightly with pepper, thyme, and nutmeg. Peel and dice papaya and apple. Peel and slice broccoli stems in thin rounds, and precook them a few minutes in the microwave.

Heat fish stock and orange juice, and thicken with cornstarch.

Mix fruit, broccoli and scallops, and microwave, covered, for about 4 minutes. Mix in sauce and microwave another few minutes.

Place the mixture in individual flame-proof dishes, slice peeled kiwi fruit on top and dust with cornmeal. Brown under the broiler.

Since microwave ovens vary in power, you may need to adjust your cooking time.
