VANILLA CHIP FRUIT TART 
1 1/2 sticks butter
1/2 c. 10x sugar
1 1/2 c. flour

VANILLA FILLING:

1 2/3 c. vanilla chips (10 oz. pkg.)
1/4 c. whipping cream
1 (8 oz.) cream cheese

FRUIT TOPPING:

1/4 c. sugar
1 tbsp. cornstarch
1/2 c. pineapple juice
1/2 tsp. lemon juice
Fresh fruit, sliced (assorted peaches, strawberries, blueberries)

Heat oven to 300 degrees. In small mixer bowl, beat softened butter and 10x sugar until smooth. Blend in flour. Press mixture into bottom of 12 inch pizza pan. Bake for 20 to 25 minutes. Cool completely.

In microwave safe bowl, place chips and cream and microwave on high for 1 to 1 1/2 minutes. Stir vigorously until smooth. Beat in package of cream cheese. Spread on cooled crust and refrigerate.

In small saucepan, stir together sugar and cornstarch. Stir in juices. Cook over medium heat, stirring constantly until thickened. Cool. Meanwhile, arrange fruit on top of filling, carefully pour or brush juice mixture over fruit. Refrigerate until served.

Since microwave ovens vary in power, you may need to adjust your cooking time.
