TINTED ANGEL MACAROONS 
1 (16 oz.) pkg. one step angel food cake mix
1/2 c. low calorie strawberry or orange-flavored soda pop (no sugar)
1 1/2 tsp. almond extract
1 (7 oz.) pkg. cookie coconut, about 2 cups

In large mixer bowl, blend cake mix, soda pop and almond extract on low speed, scraping bowl constantly 1/2 minute. Beat on medium speed, scraping bowl occasionally for 1 minute. Fold in coconut. Drop by teaspoons about 2 inches apart on a vegetable oil-sprayed cookie sheet. Bake 8-10 minutes at 350 degrees.

For fruit macaroon, substitute water for pop, vanilla for almond extract and add 1 cup chopped dried apricots, figs, prunes or coconut. Makes about 8 dozen cookies at 25 calories each. Good for diabetics and calorie counters.

Recommend using parchment paper--easy cleanup & can move from baking sheet to cooling rack with ease. Variations I have used chopped pecans w/raspberry diet soda tinted with red food coloring and Diet Mt. Dew with coconut tinted green for Christmas cookies for diabetic family members.
