SPANISH TORTILLA | |
5 to 6 medium potatoes, cleaned and diced 2 medium onions, chopped 6 eggs, beaten cooking oil (enough to cover bottom of skillet) salt and pepper to taste cooking spray Sauté potatoes and onions in oil until tender. Potatoes will take longer to cook so put them in first and let them cook about 10 minutes before adding the onions. Whip eggs in a large bowl, then add potatoes and onions and pour mixture into a nonstick skillet (spray with cooking spray). Cook on one side until eggs become firm. Flip and brown the other side. Then place on a cutting board. Cut into bite-size pieces and serve. |
