CHICKEN GUMBO SOUP 
4 c. chicken broth
1/4 c. onion, chopped
1/4 c. green pepper, chopped
1 (16 oz.) can tomato pieces and juice
1 c. okra pieces, fresh, frozen or canned
2 c. cooked chicken or turkey, diced
Salt and pepper to taste
1/4 c. raw rice

Stew the vegetables in the broth on low heat until thoroughly cooked. Add the chicken and rice and stew until rice is tender. Add salt and pepper to taste. Simmer on low heat for an hour will enhance the flavor.
