CHICKEN AND MELON SALAD 
2 c. diced, cooked chicken
1/2 c. sliced celery
2 sm. cantaloupes, halved & seeded
1 c. chopped green onions

PINEAPPLE YOGURT DRESSING:

1/2 c. low fat pineapple yogurt
2 tbsp. mayonnaise
1/4 tsp. ground ginger
1 c. strawberries, halved or 1 c. sliced kiwi for garnish
1 tbsp. sunflower seeds, for garnish

In mixing bowl combine the chicken and celery. Carefully remove the pulp from the cantaloupe (reserve the shell), and cut into medium chunks. Add cantaloupe to the chicken along with the onions. Prepare the dressing by mixing together the yogurt, mayonnaise and ginger. Pour over salad. Put into shells. Garnish with strawberries or kiwis and sunflower seeds. Serves 4.
