HONEY SAUCE 
1 egg yolk
1/2 c. milk
1/2 c. honey
1 tbsp. butter, melted
1/8 tsp. nutmeg (or cinnamon)

Beat egg yolk. Stir in milk, then honey. Add butter and spice. Cook over boiling water for about 10 minutes, stirring until thickened. Makes about 1 cup.
