Dish out your favorite nutty ice cream, walnut this or buttercrunch that. Anything crunchy that would lean toward a butterscotch rather than chocolate sauce. Maybe do this after you heat your sauce.
Pour your honey into a flat pan and get it hot; it gets thin.
Add an oz. or two of Scotch whisky (high grade not necessary), or even 3 oz. depending on your guests, and blend it in with the honey.
It will seem awfully thin, but as soon as the hot sauce hits the ice cream, you get the effect of thickness. It pools in the bottom of the cup: not to worry, people find it, and always ask the recipe.
