RITZ PIE 
20 Ritz crackers rolled fine
1/2 c. chopped walnuts or pecans
3 egg whites beaten stiff
1 c. granulated sugar
1 tsp. baking powder
1 tsp. vanilla
Pinch of salt

Gradually stir sugar and baking powder into beaten egg whites; add vanilla and salt. Fold in Ritz crackers and nuts.

Grease 8-inch pie plate well and fill with above mixture. Bake 30 minutes at 350 degrees. For 10-inch pie, add 1 more egg white and 1/2 additional ingredients. Serves 8-10.

May be made day before serving with your favorite topping put on when pie is cooled.

Use as a crisp meringue and add topping when ready to serve (any topping - whipped cream, ice cream, or pudding).
