RHUBARB NUT BREAD | |
1 1/2 c. brown sugar 2/3 c. salad oil 1 egg 1 c. buttermilk 1 tsp. salt 1 tsp. baking soda 1 tsp. vanilla 2 1/2 c. flour 1 1/2 c. rhubarb, diced 1/2 c. nuts, chopped 1/2 c. sugar 1/2 tsp. cinnamon 1 tbsp. butter Combine all ingredients except sugar, cinnamon and butter in the order given. Pour into 2 greased 9 x 5 inch loaf pans. Blend sugar, cinnamon and butter. Sprinkle over batter. Bake in 350 degree oven for 60 minutes. Do not over-bake. This is a rich bread and is best served the second day. |
