FRESH APPLE CAKE 
1/2 c. butter
1 1/2 c. sugar
1 (8 oz.) carton lowfat plain yogurt
1 egg
2 tsp. vanilla
2 1/2 c. flour
1 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
1/4 tsp. nutmeg
3 c. cored and chopped Golden Delicious apples
1 c. chopped nuts

Cream butter; add sugar. Add yogurt and egg; beat until fluffy. Combine flour, baking soda, spices, salt. Mix well. Stir dry ingredients into creamed mixture. Add apples and nuts; mix until blended. Pour into greased and floured 9x13x2 inch pan. Bake at 350 degrees for 50 to 60 minutes or until wooden pick inserted near center comes out clean.

Just before serving, frost with brown sugar Cool Whip.
