EASY CHICKEN PARMESAN 
4 skinless boneless chicken breasts
2 eggs
salt and pepper, to taste
5 to 6 oz. seasoned bread crumbs (Progresso or 4C)
1 (24 oz.) jar meatless pasta sauce (or 3 cups homemade)
6 to 8 oz. shredded Mozzarella or Provolone cheese
1 (16 oz.) box spaghetti pasta, cooked and drained (Barilla)

Preheat oven to 350°F.

Trim excess fat off chicken (if needed) and rinse in cold water. Place chicken in 9x13-inch baking pan.

Whisk eggs seasoned with salt and pepper until smooth. Pour egg mixture over chicken.

Sprinkle bread crumbs over chicken and egg. Be sure to cover egg as well.

Spoon pasta sauce over bread crumbs, completely covering all.

Bake at 350°F for 35 minutes or until chicken reaches an internal temperature of 155°F on meat thermometer.

Top with shredded cheese and bake another 15 minutes or until cheese is melted.

Serve over prepared spaghetti pasta.

Serves 4.

Super simple and tastes amazing (especially with some fresh basil sprinkled on top!). I used Panko style breadcrumbs for extra crunch.
