MY MOM'S RHUBARB PIE 
3 c. fresh rhubarb pieces (1/2 inch pieces)
1 1/2 c. sugar
3 tbsp. flour
1/8 tsp. salt
2 eggs, beaten
1 tbsp. butter
Pie crust dough

Put rhubarb pieces in large bowl. Sift flour, sugar and salt together and mix with rhubarb. Let mixture stand while you roll out 1 crust and fit into pan. Stir beaten egg into mixture and pour into crust. Dot with butter. Make a lattice top crust of 1/2 inch dough strips. Sprinkle 1/2 teaspoon cinnamon or nutmeg over rhubarb before top crust is put on. Bake for 10 minutes at 425 degrees and then for 30 minutes at 325 degrees.
