DELMONICO POTATOES 
8 med. potatoes
8 tbsp. butter
6 tbsp. flour
2 1/2 c. light cream or half & half
1/2 tsp. salt
Dash of pepper
1 c. grated sharp Cheddar cheese
1/2 c. bread crumbs

Peel and dice potatoes. Boil until done, but not mushy. Drain and place in 2 quart buttered baking dish. In saucepan melt 6 tablespoons butter and blend in flour, gradually add cream, stirring. Heat to boiling, stirring constantly. Season with salt and pepper. Pour over potatoes. Top with grated cheese.

Melt remaining 2 tablespoons butter and stir in bread crumbs. Sprinkle over casserole. Bake at 400 degrees for 20-30 minutes until bubbly and then cheese melts. Serves 6.
