SCALLOPS PALERMO 
2 (12 oz.) pkgs. scallops
2/3 c. bread crumbs
1/2 c. Parmesan cheese
2 eggs, beaten
Olive oil

Roll scallops in bread crumbs and cheese. Dip in egg and roll again in bread crumbs.

Heat oil in skillet. Fry scallops until brown.
