FRUIT PUDDING CAKE | |
2 c. sifted flour 1 1/2 c. sugar 2 tsp. baking soda 1/4 tsp. salt 1 (1 lb. 1 oz.) can fruit cocktail 2 eggs, beaten Sift together flour, sugar, soda and salt. Add eggs and fruit cocktail; mix well and turn into 9"x12" greased and floured pan. Bake 1 hour at 350 degrees. Cool 10 to 15 minutes then ice. PUDDING ICING: 1/2 c. butter 1 c. confectioners' sugar 1/2 c. evaporated milk 1 egg yolk 1 tbsp. vanilla 1 c. shredded coconut 1/2 c. chopped nuts Combine butter, sugar, milk and egg yolk in heavy saucepan. Bring to boil, cook and stir 2 minutes. Add vanilla, coconut and nuts. Cool slightly and spoon over warm cake. |
