SPINACH PARMESAN 
2 (1 lb.) bags spinach (frozen)
1 c. Parmesan cheese, grated
1 med. onion, chopped sm.
2 to 3 cloves garlic

Boil spinach for 2 to 3 minutes, drain. In small amount of oil, fry onions and garlic for a couple of minutes until tender. Add spinach and mix well. Stir in half cup cheese. Put in casserole dish, sprinkle remaining Parmesan cheese on top. Bake in 325 degree oven for 10 minutes.
